A THOUSAND AND ONE TRUFFLES THE FIVE COLOURS OF TASTE

Stefania Calugi, at the helm of her eponymous company, specialises in the search, selection and sale of fresh truffles and the processing of truffle products. With experience and passion Stefania is constantly developing innovative products whilst respecting their traditions. In 2021, she and her team created the MILLE E UN TARTUFO [THOUSAND AND ONE TRUFFLES] line, which consists of five product variants. Dried, powdered, or freeze-dried, with fruits and vegetables that harmonise with the spices and combine with the truffles, create an easy-to-use condiment that is perfect for any dish.

The packaging, made of elegant glass, was inspired by the Tuscan hills and desert dunes. The Thousand and One Truffles line has been developed to introduce the distinct flavour of truffles so it can be combined at 360°. Stefania has created unique and innovative products, whilst invariably keeping her eye on tradition. Because of her vast experience and knowledge of the raw materials, she is ever ready to meet her customers’ needs and desires.

01 ORIGINE [ORIGIN] Powdered truffles. Pure truffle.

02 DUETTO [DUET] Powdered truffles and mushrooms. The two, which are flavoured with an intriguing spice, combine perfectly.

07 CONOSCENZA [KNOWLEDGE] Powdered truffles and tomatoes. Seven ingredients come together in a play of original flavours combined with truffles.

12 COMPRENSIONE [COMPREHENSION] Powdered truffles with raspberry. The raspberries with their tart, sweet tang combine perfectly with the strong flavour of the truffles.

• 28 ARMONIA [HARMONY] Powdered truffles and apricots. The sweet apricot fruit combined with yellow squash and just a touch of pepper, enhance the truffles’ flavour.

All five powders can be used during the preparation of first and second courses or even when making of baked goods and desserts.

Try them as a garnish on finished dishes too, for an extra note of colour or dash of flavour!

The farm, which monitors the entire process from the creation of the product to its packaging, is BRC, IFC, FDA, HALALAL and Bio certified, currently has more than 150 truffle references, and that is not all.
