Tirrena: Tuscan tradition enhancing ancient grains 

Born in the heart of Tuscany, Tirrena represents the excellence of milling and artisanal pasta-making. A product of the synergy between a land rich in history and a production method that respects both time and tradition, this pasta stands out for its quality, digestibility, and ability to enhance the authentic flavor of wheat.  

Tirrena’s distinctive element is its choice of raw materials: only ancient grains carefully cultivated in the estates of the Frescobaldi family, a name that has been synonymous with passion for the land and a commitment to quality for over a thousand years. The varieties used—Senatore Cappelli, Khorasan, and Evoldur—offer superior nutritional properties thanks to their high fiber, polyphenol, and vitamin content.  

What makes the production process unique is the artisanal craftsmanship passed down through generations. After milling at Molino Borgioli in Calenzano, the pasta is bronze-drawn and subjected to a slow drying process lasting between 72 and 144 hours at temperatures below 38°C. This meticulous process preserves the organoleptic qualities of the wheat, giving the pasta its characteristic hazelnut color and exceptional ability to absorb sauces.  

Tirrena’s philosophy is deeply rooted in its territory: every stage of production takes place in Tuscany, from the field to the table, ensuring a product that fully embodies the region’s authenticity. The transformation takes place at Pastificio Artigiano Fabbri in Strada in Chianti, a historic site of Tuscan pasta-making, where the finest raw materials meet artisanal expertise.
