Salumificio San Carlo has been present for over 30 years as a producer of dry-cured meats (salumi) in the Piacenza area, in Emilia, an Italian region renowned for its food specialties. The company is located in Ziano, on the hills of the Tidone Valley, an ideal environment for maturing salumi.
The typical products of Piacenza’s territory, coppa, pancetta and salame, have always been at the heart of the company’s production and in the past few years these products have represented the focus of our company’s development plans. Salumificio San Carlo has thus become leader in the production of Coppa, Pancetta e Salame Piacentino DOP (PDO- Protected Designation of Origin). San Carlo joined the Consortium for Salumi Piacentini in 1993, contributing to the development of these protected productions.
In 2006, the company started its first clean-room for slicing, thus beginning the production of pre-sliced salumi, a complete range among which the DOP products stand out. In the following years more slicing lines were introduced to meet the ever growing demand for this kind of products of high service content for the consumer.
Salumificio San Carlo combines traditional productions with technologically advanced equipment in order to ensure high quality products.
Production
Salumificio San Carlo is specialized in the production of coppa piacentina DOP, pancetta piacentina DOP and salame piacentino DOP, and is market leader for these three products. The company is also a producer of various types of pancetta (bacon, smoked bacon, lean pancetta, pancetta coppata, etc.), of coppa and of salami. All these products are available in different formats and types of packaging: whole-pieces, vacuum-packed, pre-sliced in modified atmosphere. San Carlo premium productions are represented by the DOP products, whose maturation takes place in our cellars for an extended period of time, according to tradition. San Carlo combines the good taste of typical products with a strong commitment to foodstuffs safety and quality issues, as testified by the following different certifications: ISO 9001, ISO 22000, BRC, IFS, as well as EMAS (environmental certification) and OHSAS 18001 (labour safety certification).
