Antica Dolceria Rizza has shown, over the last eighty years, that it is capable of innovation while remaining the guardian of the ancient traditional recipe dating back to 1746, which involves processing Modica’s chocolate at low temperatures, for a short time and without “conching” and “tempering”, thus respecting the characteristics and originality of this particular product that identifies its territory of provenance. All this is also reflected in the recent inclusion of the chocolate ingredient PepiteModica in the gamma horeca: crunchy, granular, heat-resistant and available in different “karats”, they are suitable for sweet and savoury recipes.
