Mininni Milling Industry Presents The Original Focaccia Of Altamura

Mininni Srl milling industry started its activity in the field of durum wheat milling in 1877 in Apulia, precisely in Altamura, one of the most important areas in Italy for the cultivation of durum wheat and renowned for its famous bread of Altamura DOP.

Since then, five generations have succeeded and all have maintained the same proactive spirit, always focusing on new technologies and arriving today at a daily durum wheat milling of 480 tons, a result that places the company among the major players on the Italian market in the production of semolina and reground semolina.

The company is now a leader in its sector and has expanded its business into a new market, that of the production of baked goods, initially frozen and now also fresh, preserved in a protective atmosphere under the Mininni Buéne brand. An offer of typical products of the Italian and Apulian tradition such as focaccia, focaccine, ciabatte, pizza bases, and panzerotti made entirely of durum wheat semolina of our own production, with high-quality raw materials and all of natural origin.

Until a few months ago, the company directed its frozen products to the Food Service channel or, in any case, to the bakery counter of large-scale retail trade, but at the beginning of 2021, it launched its first packaged product under the Mininni Buéne brand to be included in the frozen food department.

As first product, we decided to present Focaccia di Altamura, a typical specialty of the Apulian town. Dating back to the Middle Ages, with its typical round shape, focaccia was baked in the ancient wood-fired ovens, some of which are still visible and working. Today, as in the past, Focaccia di Altamura is made from the union of durum wheat semolina, water, and yeast.

Filled as is traditional with cherry tomatoes, olives, and oregano, the product is proposed pre-cut in four single portions to facilitate its use by the consumer who can choose to defrost it in pieces, as an accompaniment to appetizers or snacks, or put it in the oven whole.

With the aim of giving greater visibility to the brand, we are already planning to expand the offer with the introduction of new references typical of the territory. Currently, the company has certifications such as IFS, BRC, VEGAN, BIO.
