“ONCE UPON A TIME THERE WAS A KING, ITS MAJESTY THE BALSAMIC VINEGAR”   Forty years ago we did not imagine that we would be here today presenting our Traditional Balsamic Vinegar of Modena, but through a series of coincidences, our secular family endowment has been transformed into a passion thus off ering you our delicious long-ageing dressing, highly valued by gourmet lovers: the black gold! The Traditional Balsamic Vinegar of Modena is an authentic distillate that is the result of patience and passion and entails much care and attention in order to obtain a full-bodied and aromatic vinegar. Traditional balsamic vinegar is not just a vinegar but it is a dressing. It is a balsamic vinegar by tradition, exclusively produced in the province of  Modena and guaranteed as D.O.P. which stands for Protected Designation of Origin. Produced with local Trebbiano grape must, it is cooked on a low direct fl ame, acetifi ed and then slowly aged in wooden barrels made of diff erent prestigious woods for at least 12 years,  defi ned as affi  nato (fi ne),  and for 25 years,  defi ned as extravecchio (extra-old). Acetaia Valeri, is a member of the Producers Consortium for the Traditional Balsamic Vinegar of Modena and a member of the Consortium for the Safeguard of the Traditional Balsamic Vinegar of Modena.  Our product is certifi ed by a sanitary authorization issued by the Public Health Offi  ce of Formigine and by Cermet, the certifi cation agency accredited by the Italian Ministry for Agricultural, Food and Forestry Policies to examine the Traditional Balsamic Vinegar of Modena.  Give way to strong emotions amidst vintage casks and intense aromas and come and visit us.
