Tassoni, Italian Quality Products For 225 Years

Founded in 1793 as an apothecary shop, Cedral Tassoni is an Italian company based in Salò, on the western shore of Lake Garda, where the offices and production plant are still located today.
In 2018, Tassoni celebrated its 225th Anniversary, an important milepost which few companies can match.
Over the course of its 225 years of history, the company, which has been run by the same family for four generations, has evolved and become a well-known, evocative brand, able to find a place for itself in the heart of Italians and to weather faddish trends. Today, the company is world-class excellence, recognized as one of the few producers which constantly and carefully controls its production chain, thereby guaranteeing the quality of the product’s entire life cycle.

The peculiarities of Tassoni’s history are fundamental since they have contributed to the realization of successful products distributed all over the world: the tradition of distilling citron to produce hydroalcoholic infusions, respect for the raw materials, and a controlled production chain which produces the aromas it uses. A real warranty of quality!
Without a doubt, the feather in the cap of the soda line is Cedrata Tassoni Soda, launched in 1956; it is produced using only natural aromas extracted from the peels of citron and citrus fruits.
Supplied directly by the cultivator, the citron fruit used for the extraction of the aroma is an Italian variety called “Diamante” (Diamond), from the region of Calabria.

The processing of the fruit, as per secular tradition, starts in the plant in the month of November by removing the most superficial layer of the peel, which is then infused in a hydro-alcoholic solution, to extract the essential oils.

Respecting the old-time recipe books, once the infusion period is over, the hydro-alcoholic aroma obtained through this process is distilled with a traditional discontinuous steaming method: the temperature is monitored to allow the elimination of what in Italian is known as the “head” and “tail” of the solution, hence maintaining only the “heart” of the distillation at its purest, using a copper still from 1936.

Whatever remains from the fruit, the pulp, is sent back to Calabria, where it is used for the production of candied fruit, avoiding any waste; giving a full circularity to the relationship of trust with the Calabrian producers and enhancing the local fruits.
From 2014 Tassoni started to offer a wider range of drinks, including Tonica

Superfine, with a natural quassia flavoring, which is preferred to quinine, and a natural citron aroma. In 2015, the company launched the” Fiori e Frutti” line (“Flowers and Fruits” line) with the idea of pouring in a glass the scents and the aromas of some flowers and fruits that Tassoni offers in its unique and natural drinks, such as Fior di Sambuco (soft drink with elderberry flower extract), Mirto in Fiore (myrtle-flavored soft drink) and Pescamara (peach-flavored soft drink with the natural flavoring of almonds).

New drinks that offer consumers the natural fragrances and aromas of flowers and fruits, and which meet the market’s continuous demand for new trends and superior mixability. All the Tassoni soft drinks can be used to create new cocktails with a contemporary flavor, satisfying the taste of a growing range of consumers. The company also produces a wide line of syrups and liqueurs.
