At the heart of the company’s offer is Parmigiano Reggiano, produced in its two mountain dairies – Caseificio Colline di Selvapiana e Canossa and Caseificio del Cigarello e Canossa -, the result of a controlled, integrated, and sustainable supply chain, which has obtained the Animal Welfare certification issued by Certiquality according to the protocol of ClassyFarm, the national reference body for Animal Welfare.
From sourcing milk from 40 local farms to adopting a zero-waste approach during production, each stage reflects the Group’s dedication to the environment and the quality of the final product. A commitment that allows the company to offer different varieties of Parmigiano Reggiano.
From Organic Parmigiano Reggiano – produced in the Cigarello and Canossa dairy, with full traceability of all processing phases and certified according to organic product regulations – to Mountain Parmigiano Reggiano, produced in mountain dairies, with milk from mountain dairies, with a minimum ageing period of 20 months, at least 12 of which in mountain warehouses. All the way to “solo Pezzata Rossa Italiana”, a high quality, organically certified mountain cheese, produced exclusively in the Colline di Cigarello and Canossa mountain dairy, using milk from a single breed of cattle, the Pezzata Rossa, from a single mountain livestock farm.
In addition to being a producer of this excellence of the Italian dairy tradition, DalterFood Group selects and distributes a wide range of Italian cheeses, enhancing and spreading the culture of our country’s flavours: from mature cheeses, such as Grana Padano and Pecorino Romano, to fresh cheeses, such as mozzarella (cow and buffalo) and burrata. In addition to these, the Group also selects cheeses suitable for those who follow a vegetarian diet such as Spinoro, a mature cheese made with 100% Italian milk, and other foreign specialities such as Emmenthal and Edamer.
All products are available in a wide variety of cuts – with the possibility of customising them according to the requirements of each individual customer -, and packaging, to satisfy hygiene, safety, and practicality requirements.
