Moreover, in order to certify the meat as \u201c<strong>Vitellone Bianco dell&#8217;Appennino Centrale IGP<\/strong>\u201d, all the requirements of the Production Regulations for breeding, slaughter and sale must be complied with. So the mark \u201c<strong>Vitellone Bianco dell&#8217;Appennino Centrale IGP<\/strong>\u201d becomes synonymous with quality and guarantees a meat that, thanks to genetic factors, natural systems of breeding and quality nutrition, has a low fat content (less than 3%) and cholesterol (less than 500 ppm) and a high protein value (greater than 20%).<\/p>\n\n\n\n<p><\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full is-resized\"><img decoding=\"async\" width=\"1920\" height=\"800\" src=\"https:\/\/allfoodonline.com\/wp-content\/uploads\/2025\/02\/CVBA_ADV-2021-04_Slider-sito_1920x800_03-Famiglia_2021-12-283.jpg\" alt=\"\" class=\"wp-image-47079\" style=\"width:787px;height:auto\" srcset=\"https:\/\/allfoodonline.com\/wp-content\/uploads\/2025\/02\/CVBA_ADV-2021-04_Slider-sito_1920x800_03-Famiglia_2021-12-283.jpg 1920w, https:\/\/allfoodonline.com\/wp-content\/uploads\/2025\/02\/CVBA_ADV-2021-04_Slider-sito_1920x800_03-Famiglia_2021-12-283-300x125.jpg 300w, https:\/\/allfoodonline.com\/wp-content\/uploads\/2025\/02\/CVBA_ADV-2021-04_Slider-sito_1920x800_03-Famiglia_2021-12-283-768x320.jpg 768w, https:\/\/allfoodonline.com\/wp-content\/uploads\/2025\/02\/CVBA_ADV-2021-04_Slider-sito_1920x800_03-Famiglia_2021-12-283-1536x640.jpg 1536w\" sizes=\"(max-width: 1920px) 100vw, 1920px\" \/><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<p>Today the Consortium for the Protection \u201c<strong>Vitellone Bianco dell&#8217;Appennino Centrale IGP<\/strong>\u201d is composed of 3.204 breeders in 8 regions of central Italy (Emilia Romagna, Tuscany, Umbria, Marche, Lazio, Molise, Abruzzo and Campania); 77 slaughterhouses; 80 traders; 125 cutting plants and 1.072 butchers registered for inspection and distributed in Italy.
