Driven by a desire to share their love of Umbria\u2019s environment with people from across the world, <a href=\"http:\/\/www.lecerque.com\" target=\"_blank\" rel=\"noreferrer noopener\">Le Cerque<\/a> wants to play its part in preserving the local climate and culture as well.&nbsp;<\/p>\n\n\n\n<p><\/p>\n\n\n\n<figure class=\"wp-block-image alignright size-large is-resized\"><img decoding=\"async\" width=\"427\" height=\"640\" src=\"https:\/\/allfoodonline.com\/wp-content\/uploads\/2025\/02\/IMG_0918.jpeg\" alt=\"\" class=\"wp-image-46512\" style=\"width:171px;height:auto\" srcset=\"https:\/\/allfoodonline.com\/wp-content\/uploads\/2025\/02\/IMG_0918.jpeg 427w, https:\/\/allfoodonline.com\/wp-content\/uploads\/2025\/02\/IMG_0918-200x300.jpeg 200w\" sizes=\"(max-width: 427px) 100vw, 427px\" \/><\/figure>\n\n\n\n<p>They believe hospitality is a form of social sustainability: it keeps us grounded to our surroundings and connected to each other. The <em>agriturismo<\/em> aims to be entirely sustainable by 2030, through renewable energy, water efficiency, and sustainable agricultural practices, in line with Italy\u2019s pastoral traditions. On the roof of the wine cellar are the property\u2019s solar panels, and along with their existing natural water wells, soon <a href=\"http:\/\/www.lecerque.com\" target=\"_blank\" rel=\"noreferrer noopener\">Le Cerque<\/a> will be able to use its pond to irrigate the land.<\/p>\n\n\n\n<p>Olive tree groves and vineyards are part of Italy\u2019s environmental heritage, and <a href=\"http:\/\/www.lecerque.com\" target=\"_blank\" rel=\"noreferrer noopener\">Le Cerque<\/a> is intent on preserving it through green agriculture; when harvesting olives, they are picked by hand with the help of mechanical arms, protecting the plant and the fruit. Within 24 to 48 hours after the picking, the olives are defoliated, washed and crushed, in order to preserve all their organoleptic properties. This gives the olive oil a smooth and balanced flavor, and an aroma containing hints of field grass and green tomato.<\/p>\n\n\n\n<p>The vineyard yields 5 different types of wine, ranging from Sangiovese, Grechetto di Todi and even a Passito. Man\u00f9 is Le Cerque\u2019s Bordeaux blend, aged in oak barrels for 12 months, giving it a strong structure, ruby red color, and notes of chocolate and spice.
