Fumagalli Danilo: depth of range and tailored service for foodservice

Erika Fumagalli, General Manager

Wide product assortment, an in house fresh-cut laboratory and a consultancy driven approach supporting every foodservice professional: today Fumagalli Danilo stands as a structured and dynamic player in the Lombardy food distribution landscape.

Erika Fumagalli, General Manager and third generation of the company, outlines the evolution of a family business that successfully combines tradition, capillary logistics and a contemporary service vision.

Fresh-cut production, supported by a dedicated in house laboratory, is a distinctive element of your offer. How does customisation influence the value perceived by clients and the competitiveness of the professional kitchens you serve?

Fresh-cut produce is the area where the difference between those who simply distribute and those who, like us, build real added value becomes most apparent.

Professional kitchens today are under constant pressure: staff shortages, rising energy costs, tight margins. Chefs need allies who give them back time and consistency. That’s where we come in.

In our facility, we don’t simply produce “cut vegetables”: we develop tailored solutions, with an impact on two levels.

The first is economic and operational: reduced waste, shorter preparation times, standardised quality regardless of who is working in the kitchen. Measurable advantages that turn a supplier into a partner. The second is trust: when we build a customised solution together, we create a bond that is hard to break.

In a fragmented market, depth of range becomes a strategic lever. How do you build your assortment to ensure quality, continuity and consistency?

Building a solid assortment in a fragmented market is first and foremost an act of listening: to customers, to their kitchens, to their ambitions.

Our philosophy stems from a precise awareness: every operator has different needs, often opposing ones, but equally legitimate. A school canteen and a Michelin-starred restaurant don’t speak the same language, just as a bar serving a hundred breakfasts doesn’t have the same priorities as a high-end patisserie. Yet all of them deserve products that meet their expectations.

This is why we have built a range that doesn’t choose between breadth and quality, but holds them together. Quality must be a consistent thread throughout, not an exception reserved for premium segments. The format changes, the complexity changes — but coherence remains the guiding principle.

And then there is continuity, perhaps the most underrated lever of all: in food service, supply disruptions cause real damage. Ensuring that a product is always available, with the same characteristics, is a concrete form of respect towards those who work with our ingredients every day.

Beyond product supply, you provide consultancy support to purchasing managers and chefs, backed by a capillary logistics network across Lombardy. How important is this integration in building long term customer loyalty?

The precise moment when a customer stops being a customer and becomes a true long-term partner is exactly when they realise you are not simply serving them, but understanding them.

And that understanding doesn’t come from a product. It comes from the sum of everything we build around the product.

Chefs, in particular, are a profile we have learned to engage with in a very specific way. They are creative people. They want to be inspired. They want a partner who brings them a new idea, a different technique, a product they didn’t know existed and that opens up new possibilities.

And then there is logistics, the backbone of everything else. Because the most sophisticated consultancy in the world counts for nothing if the product doesn’t arrive. If it arrives late. If it arrives in less than perfect condition. This is why we have built a capillary distribution network with daily refrigerated deliveries: on time, every day, with the cold chain fully intact. Because the quality we select upstream must arrive at its destination exactly as intended.

Through a combination of product expertise, tailored solutions and reliable logistics, Fumagalli Danilo continues to strengthen its role as a trusted partner for foodservice professionals. A model built on listening to customers’ needs and delivering consistent quality, supporting kitchens across Lombardy in their daily operations.
